Partridgeberry Cake
HIGH COUNTRY APPLE CAKE (or partridgeberry)

1¾ cups sugar
1 cup oil
1 tsp salt
1 tsp baking powder
3 eggs
2 cups flour
1 tsp vanilla
1 tbsp cinnamon
2 cups unpeeled, cubed apples (or 2 cups of partridgeberries, fresh or frozen, but do not unfreeze if using frozen)
1/2 cup pecans, chopped (optional)
Measure all ingredients, except apples and pecans, into large bowl.
Beat together thoroughly with spoon. Fold in apples or partridgeberries and pecans. Bake in greased and floured 9" x 13" pan at 350 degrees for 45 to 50 minutes (I made it in a ring pan). Cool and remove from pan. Serves 12.
