Bean Salad

It was made with 2 cups of pinto beans and two cups of white beans. Boiled in vegetarian stock with two bay leaves. When beans are done, drain water and set aside.
In a separate dish, fry up onions and garlic in sesame-olive oil mix for 5 minutes on medium heat.
Add chipotle powder.(can be substituted for other hot stuff).
After onions and garlic are slightly browned add curry sauce which is any kind of yellow curry paste and coconut milk.
Add one big spoon of brown sugar mix well and let sauce cook with onions on med high for 10 minutes. Turn off heat and add cooked beans into sauce, cover and let sit for 5 minutes.
Can be eaten hot or refrigerated!
