Fruit and Vegetable Tsimmis

(In Yiddush, a tsimmis means much ado about nothing. full of fibre, beta carotene, potassium and vitamins)
¾ c. pitted prunes
¾ c. dried apricots
1/3 to ½ c. raisins (I don’t use these-I just use more prunes and apricots))
2lb.(1kg) carrots. peeled and sliced
1 sweet potato, peeled, quartered & sliced (I use two)
14 oz.(398ml)can pineapple chunks, drained (reserve ½ c. juice)\1/2c. orange juice
salt &pepper ,to taste (I use about 1/8 tsp of each)2 tsp. pareve tub margarine
1 tsp. cinnamon (I also use ½ to 1tsp.ginger, nutmeg or allspice)
1. Soak prunes and apricots and raisins in boiling water to cover for ½ hour, until plump/
2. Drain well( I save 1 cup to add to the mixture).
3. Meanwhile, cook carrots and sweet potato in boiling water until tender but firm, about 15 minutes.
Drain well.
4. Combine reserved pineapple juice with remaining ingredients except pineapple chunks;
mix gently. (I just add the pineapple in then)
5. Place mixture in a sprayed 3 quart casserole.
6. Bake covered in a preheated 350 F oven for 35 minutes.
7. Stir in pineapple chunks and bake uncovered 15 minutes more, basting once or twice.
8. Yields 10 servings, Freezes and Reheats well
9. I usually double the recipe and freeze it in smaller portions.
