The lentil are a recipe from my Sephardic Grandmother, and were a traditional dish that she served - however, meaurements are VERY approximate!
 
2 cups lentils (soaked for 30 minutes in water)
4 tbsp. Olive Oil
1 or more cups crushed tomatoes (canned)
2 tbsp tomato paste
2 large onions - chopped.
salt and pepper
 
Fry onions in oil. Add other ingredients, cover with water and cook until tender.
I tend to cook them for a long time on low.
