Baby Spinach Salad

Baby Spinach Salad

Make a basic salad.  This time I used:
 
Baby spinach, but also like to use local turnip greens when in season.
Sugar snap peas
tomatoes
cucumber or raw zucchini
 
Add:
Walnuts (or your favorite nut)
Dried Cranberries or raisins
Cheese (I used grated sharp cheddar though also like to use crumbled goat cheese, should be a relatively salty cheese, not mozzarela or provolone, for example)
 
Salad dressing:
 
1/3 parts balsamic vinegar to 2/3 parts olive oil.
Pure Maple Syrup
 
In a glass, pour vinegar first, then add a little maple syrup to sweeten to taste. Do not over-sweeten!  Mix well with a fork.  When desired balance is obtained add olive oil and beat with fork until emulsified.
