Spinach pomegranate salad with walnuts

Spinach pomegranate salad with walnuts

Quantities in this salad are really up to the person making it.  Mine included:

baby spinach leaves (probably around 8 cups)
half a cucumber, seeded & peeled & cut in pieces
half of a quite large tomato, cut in pieces
one fourth of a red onion, cut in quite narrow pieces
six big white mushrooms, sliced
one cup walnuts
seeds of one pomegranate

salad dressing:
juice of one lemon
equivalent amount of olive oil
4 cloves of garlic (or other amount to taste), chopped fine
salt & pepper

You can vary the salad ingredients to taste, or depending on what is available when you make it.  I think the key elements that make it this salad and not some other one are the spinach, the pomegranate, the walnuts, and the lemon-garlic salad dressing.  But your taste may vary!
